Ingredients

  • 2 lbs chicken wings
  • 1 tbsp peanut oil (or vegetable oil)
  • 1 tbsp Shaoxing wine (or dry sherry)
  • 1 tbsp light soy sauce (or regular soy sauce)
  • 1 tsp ground ginger
  • 1 ¼ tsp salt
  • 1 tsp sugar
  • ½ tsp garlic powder
  • ¼ tsp white pepper powder
  • 2 tbsp cornstarch
  • 2 tbsp all-purpose flour
  • Oil spray

Instructions

  • In a large bowl (or zip-top bag), combine the wings with oil, Shaoxing wine, soy sauce, ginger, salt, sugar, garlic powder, and white pepper. Toss until everything is evenly coated, massaging the seasonings into the chicken. Cover and marinate—overnight in the fridge is best, but at least 2 hours at room temp works too.
  • When ready to cook, preheat your air fryer to 350°F (176°C).
  • Drain off the marinade and pat the wings dry with paper towels. In a small bowl, whisk together cornstarch and flour, then toss with the wings until they’re lightly coated. You should see a thin, floury crust form on the surface.
