Ingredients

  • 1 teaspoon Dutch process cocoa powder
  • 2 teaspoons sugar
  • 1 box vanilla cake mix
  • 4 large eggs (room temperature)
  • 1 cup unsalted butter
  • 1/3 cup milk (room temperature)
  • Red and blue gel food coloring
  • Filling:
  • 1/2 cup unsalted butter (softened)
  • 1 1/4 cups powdered sugar
  • Pinch of salt
  • 2 cups marshmallow fluff

Instructions

  1. Set your oven to 350°F (175°C). Prepare a large baking sheet by lining it with parchment paper to prevent sticking.
  2. In a spacious mixing bowl, pour in the cake mix. Add the cocoa powder and sugar, then whisk thoroughly until the mixture is smooth and free of lumps.
  3. Place the butter in a microwave-safe bowl and heat for about 30–45 seconds until fully melted. Add the eggs and milk to the melted butter and mix until well combined.
  4. Slowly pour the wet ingredients into the dry mixture. Stir everything together by hand, making sure the batter becomes smooth and no clumps remain.
  5. Split the batter evenly into two separate bowls. Add red gel coloring to one and blue gel coloring to the other. Stir each bowl until the colors are vibrant and evenly distributed.
  6. Place both bowls in the refrigerator and allow the batter to chill for 15–20 minutes. This helps make it easier to scoop and shape.
  7. Using a small cookie scoop, drop spoonfuls of batter onto the prepared baking sheet, leaving about 2 inches of space between each portion.
  8. Bake for approximately 6 minutes, or until the tops rise and gently spring back when touched.
  9. Remove from the oven and allow the cookies to cool completely on a wire rack before assembling.
  10. To prepare the filling, beat the butter, powdered sugar, and salt together using a hand mixer until light and fluffy, about 3 minutes.
  11. Gently fold in the marshmallow fluff until fully incorporated. Chill the filling for about 10 minutes to firm up slightly.
  12. Spread a layer of filling onto the flat side of one cookie, then top it with another cookie to create a sandwich. Repeat with remaining cookies, being careful not to press too hard.
