Ingredients
- Beef & Spinach Filling:
- 1 tbsp olive oil
- 1 lb lean ground beef
- 1 lb spinach (thawed, well-drained)
- 1½ tsp garlic powder
- 1½ tsp onion powder
- ½ tsp salt & pepper
- ¼ tsp red pepper flakes
- Cheese Filling:
- 1½ lbs ricotta cheese
- 8 oz mozzarella (shredded, divided)
- 1¼ cup Pecorino Romano
- 2 eggs (beaten)
- ½ tsp black pepper
- Other:
- 1 lb jumbo pasta shells
- 5–6 cups marinara sauce
- Olive oil & extra cheese for topping
Instructions
- Preheat oven to 375°F and grease a baking dish with olive oil.
- Heat oil in a skillet and cook beef until browned. Add spinach and seasonings, cook until dry. Let cool.
- Boil pasta shells in salted water until slightly undercooked. Drain and set aside.
- Mix ricotta, mozzarella (reserve some), Pecorino, eggs, and pepper.
- Fold in cooled beef and spinach mixture.
- Spread marinara sauce on the bottom of the baking dish.
