  • For the nut mixture:
  • 1 cup pistachios or walnuts
  • 2 tablespoons powdered sugar
  • 2 tablespoons butter
  • For the cheesecake:
  • 500 g Quark (Labneh cheese)
  • 200 g cream cheese
  • 1 cup granulated sugar
  • 1 packet of vanilla sugar
  • 3 tablespoons vegetable oil
  • 3 tablespoons cornstarch
  • 200 ml heavy cream
  • 3 eggs
  • For the syrup:
  • 1 cup water (200 ml)
  • 1 cup granulated sugar
  • 1 slice of lemon

Instructions

  1. Grease a springform pan and layer it with a sheet of phyllo dough. Brush melted butter over the dough.
  2. Repeat layering phyllo sheets and butter a few times, then trim any excess dough hanging over the pan.
  3. Bake at 170°C (340°F) for about 10 minutes until lightly golden.
  4. Once out of the oven, spread the nut mixture evenly over the baked phyllo crust.
  5. For the cheesecake filling, mix all ingredients except the eggs. Then add the eggs one by one, mixing well after each addition.
  6. Pour the cheesecake mixture over the nut layer and bake at 165°C (325°F) for about an hour on the middle rack.
  7. After baking, let it cool in the oven with the door slightly ajar, then refrigerate for at least 6 hours.
  8. For the syrup, boil water, sugar, and lemon slice for 10 minutes, then let it cool.
  9. Before serving, sprinkle chopped pistachios over the cheesecake and pour the syrup on top.
