I absolutely love how someone came up with the idea of icing a cookie and adding another on top! It’s seriously as great as sliced bread. Here’s how to make it:

Ingredients

  • 3.7 oz Biscoff spread
  • 3.2 oz maple syrup
  • 3.2 oz coconut sugar
  • 2 fl oz milk of your choice
  • 2.1 oz Macro Mike caramelized biscuit protein powder (use code 'amb-mon' for 10% off)
  • 1.6 oz cacao powder
  • 1/2 tsp bicarbonate of soda
  • Filling:
  • 2.6 oz butter
  • 2.6 oz Biscoff spread
  • 1.8 oz powdered sugar
  • 1.4 oz Macro Mike caramelised biscuit protein powder

Instructions

  1. Preheat the oven to 320°F and line a tray/s with baking paper.
  2. Whisk together the Biscoff, syrup, sugar, and milk in a medium bowl until smooth.
  3. Add the protein, cacao, and bicarb. Mix until a soft, slightly sticky dough forms.
  4. Shape the dough into 10-12 balls, then place them on the tray, leaving some space between them.
  5. Gently press the balls down to your desired thickness (they won't spread much), then bake for 10 minutes.
  6. For the frosting, beat together the butter and Biscoff in a medium bowl using a hand-held beater.
  7. Once combined, sift in the sugar and protein. Beat until it's light and fluffy.
  8. Frost the bottom of half the cookies, then sandwich them with an unfrosted cookie. Time to enjoy these delightful treats!
