Ingredients

  • For the Brownie:
  • 200 grams of butter
  • 160 grams of dark chocolate
  • 4 eggs
  • 1 and 3/4 cups of sugar (150 grams)
  • 1 and 1/2 cups of all-purpose flour (170 grams)
  • 2 tablespoons of cocoa powder (30 grams)
  • 1 packet of baking powder
  • For the Ganache:
  • 200 ml of heavy cream
  • 160 grams of dark chocolate
  • For the Topping:
  • 250 grams of mixed dark and milk chocolate (you can use only dark or milk chocolate)
  • 1 tablespoon of vegetable oil

Instructions

  1. Melt the butter and dark chocolate in a saucepan, then set aside to cool.
  2. In a separate bowl, beat the eggs and sugar until the mixture turns pale.
  3. Add the melted chocolate mixture to the egg mixture and stir until combined. Then add the dry ingredients and mix on low speed until just combined.
  4. Pour the batter into a large rectangular baking dish lined with parchment paper. Bake at 160 degrees Celsius (320 degrees Fahrenheit) until a toothpick inserted into the center comes out clean.
  5. For the ganache, heat the heavy cream until it just begins to boil, then remove from heat and add the chopped dark chocolate. Stir until smooth, then let it cool to room temperature before refrigerating until set.
  6. Once the brownies are baked and cooled, cut them into intense-sized squares and hollow out the center (where the ganache will go) using the back of a teaspoon.
  7. Pipe the ganache into the hollowed-out centers of the brownies. Place them in the freezer for 45 minutes.
  8. Melt the chocolate for the topping and mix in the vegetable oil. Spread the chocolate mixture onto parchment paper and refrigerate until set.
  9. Once set, cut the chocolate into pieces and place one on top of each brownie.
  10. Enjoy your decadent chocolate intensity brownies!
