Ingredients

  • 1 1/2 cups cookies, like Graham Crackers (150 g)
  • 3 1/2 tablespoons butter (50 g)
  • 2 1/4 pounds cheesecake cheese, like Piątnica or My Favorite (1 kg)
  • 7 ounces vanilla chalwa (200 g)
  • 1/2 cup heavy cream (120 g)
  • 3/4 cup sugar (150 g)
  • 4 eggs
  • 1 packet vanilla pudding powder (40 g)
  • 1/3 cup heavy cream for topping (80 g)
  • 3 1/2 ounces white chocolate for topping (100 g)
  • 1 ounce chalwa for topping (30 g)

Instructions

  1. Melt the butter and mix it with crushed cookies until you get a sandy texture.
  2. Press the cookie mixture into a baking pan lined with parchment paper.
  3. In a saucepan, combine the heavy cream and crumbled chalwa. Heat on low until the chalwa melts. Let it cool.
  4. In a bowl, mix together the cheesecake cheese, eggs, sugar, pudding powder, and the cooled chalwa mixture until just combined.
  5. Pour the cheese mixture over the cookie crust and bake at 300°F (150°C) for 60-70 minutes until set.
  6. Let the cheesecake cool in the oven with the door cracked open, then chill it in the refrigerator overnight.
  7. For the topping, crush the white chocolate and chalwa, then melt them with heavy cream over low heat.
  8. Spread the topping over the chilled cheesecake and refrigerate again. Enjoy your delightful chalwa cheesecake!
