Cheesecake Stuffed Brownies

These brownies are a chocolate lover’s dream, loaded with cocoa and dark chocolate for an intense chocolatey flavor. They strike the perfect balance between sweetness and the creamy cheesecake layer, making them a truly indulgent treat that’s hard to resist.

Adding the cheesecake layer takes these already delicious brownies to a whole new level, and the best part is, it couldn’t be easier. You simply mix all the ingredients together – it’s as simple as that!

Ingredients:

For the Brownie:

  • 1 1/2 cups (190g) butter
  • 7 ounces (200g) dark chocolate
  • 1 1/4 cups (160g) all-purpose flour
  • 1/2 cup (50g) cocoa powder
  • 3 large eggs
  • 1 cup (200g) granulated sugar
  • 1/4 cup (60g) light brown sugar
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt

For the Vanilla Cheesecake:

  • 8 ounces (220g) cream cheese
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla extract

Instructions:

  1. Begin by melting the dark chocolate and butter in the microwave, heating them in 20-second intervals. Once melted, set this mixture aside to cool.
  2. Using an electric beater or stand mixer, combine the eggs, sugar, and vanilla extract until you achieve a creamy texture. Then, gently fold in the cooled chocolate-butter mixture with a spatula.
  3. Sift the flour and cocoa together, and add this to the egg mixture, folding it in with a spatula. Set this brownie batter aside.
  4. For the cheesecake layer, it’s as simple as mixing all the ingredients together until they’re well combined.
  5. Now, it’s time to assemble your brownies. Pour half of the brownie batter into a lined 20cm brownie tin. Then, spread the cheesecake mixture over the brownie layer, and top it off with the remaining brownie batter.
  6. For that extra oomph, sprinkle some chopped chunks of dark chocolate on top. Pop it in the oven at 170°C for 20 minutes if you want your brownies to be extra fudgy. If you prefer them less fudgy, bake for 25-30 minutes.
