These muffins were here and gone in a flash! I even managed to snap a few pics before they vanished. They’re perfect – moist, delicious, and you don’t even need a mixer! Just wait for them to cool a bit because, trust me, peeling them out of the liners while they’re still hot is a bit of a challenge. But once they’re cooled down, they’re absolute perfection! Save the recipe and give it a go; you won’t regret it!

Ingredients

  • 3 eggs
  • 1 cup plain yogurt (190 g)
  • 1/3 cup melted butter (80 g)
  • 2/3 cup sugar (140 g)
  • 1 teaspoon baking powder
  • 1 1/2 cups all-purpose flour (190 g)
  • About 1/2 cup chocolate chips or chopped milk, dark, or semi-sweet chocolate

Instructions

  1. In a mixing bowl, crack the eggs, add melted butter and yogurt, and whisk until well combined.
  2. Add sugar, flour, and baking powder to the bowl. Mix briefly until all ingredients are just combined.
  3. Fold in the chocolate chips until evenly distributed throughout the batter.
  4. Spoon the batter into muffin liners in a muffin tin, filling each about 3/4 full.
  5. Bake at 340°F (170°C) for approximately 21 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  6. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy your homemade chocolate chip muffins!
