With this recipe for fine buttermilk cake with coconut you convince the whole family. The buttermilk and cream make the cake especially moist!
Delicious Coconut Buttermilk Cake
- 2 eggs (size M)
- 160 g sugar
- 500 ml buttermilk
- 1 pck. baking powder
- 1 tsp. baking soda
- 400 g flour (type 405)
- 200 g coconut flakes
- 80 g sugar
- 1 pck. vanilla sugar
- 400 g cream
Line a deep baking tray ( 30 x 40 cm) with baking paper. Preheat the oven to 180 degrees top/bottom heat (convection oven: 160 degrees).
Mix the eggs with sugar and buttermilk. Mix baking soda with baking powder and flour and sift into the egg mixture. Mix everything well, then pour into the baking tray.
Mix coconut flakes with sugar and vanilla sugar and sprinkle on the liquid batter. Bake the coconut cake in the preheated oven for about 20 minutes. After baking, drizzle the still hot coconut cake with cream. Let cool, then cut into pieces. The cake makes about 24 pieces.
