Ingredients

  • Dough:
  • 1 egg
  • 1/2 cup (125g) cold butter
  • 1 cup (125g) powdered sugar
  • 2 cups (280g) flour
  • 1 packet of vanilla sugar
  • Meringue:
  • 4 egg whites
  • 1 1/4 cups (250g) sugar
  • 1 teaspoon cornstarch
  • A good pinch of salt
  • Additionally:
  • 45 Toffifees

Instructions

  1. Preparation:
  2. Preheat your oven to 300°F (150°C) with both upper and lower heat.
  3. Line baking trays with parchment paper.
  4. Making the Dough:
  5. In a large mixing bowl, beat together 1 egg, 1/2 cup (125g) cold butter (cut into cubes), and 1 cup (125g) powdered sugar until creamy.
  6. Add 2 cups (280g) flour and 1 packet of vanilla sugar to the mixture. Combine until a dough forms.
  7. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  8. Making the Meringue:
  9. In another clean mixing bowl, beat 4 egg whites with a pinch of salt until soft peaks form.
  10. Gradually add 1 1/4 cups (250g) sugar, continuing to beat until stiff peaks form.
  11. Sprinkle in 1 teaspoon of cornstarch and beat until well incorporated.
  12. Assembling the Cookies:
  13. Roll out the chilled dough on a floured surface to about 1/4 inch thickness.
  14. Use a cookie cutter to cut out circles from the dough.
  15. Place the dough circles on the prepared baking trays.
  16. Press a Toffifee candy into the center of each dough circle.
  17. Spoon a dollop of meringue on top of each Toffifee candy, covering it completely.
  18. Baking:
  19. Bake the cookies in the preheated oven for about 20-25 minutes, or until the meringue is lightly golden.
  20. Remove from the oven and let cool on the baking trays for a few minutes before transferring to a wire rack to cool completely.
