Forest Berry Crumble Cake

Forest berry crumble cake

Ingredients

  • For the cake batter:
  • 3 eggs
  • 1 cup of granulated sugar
  • 1 packet of vanilla sugar
  • 1/2 cup of vegetable oil
  • 1 cup of yogurt
  • 1 packet of baking powder
  • Zest of a lemon
  • 2 cups of all-purpose flour (250g)
  • For the topping:
  • 1 cup of forest berries (I used frozen berries)
  • 1 tablespoon of powdered sugar
  • For the crumble:
  • 1/4 cup (50g) of butter
  • 5 tablespoons of granulated sugar
  • 1 cup of all-purpose flour

Instructions

First, let's prepare the crumble topping. Mix all the crumble ingredients in a bowl, crumbling them together with your hands until it forms a crumbly texture.

Now, onto the cake batter:
Whisk together the eggs, granulated sugar, and vanilla sugar until fluffy. Then, add in the vegetable oil, yogurt, and lemon zest. Sift in the flour and baking powder, and mix until well combined.

Pour the cake batter into a greased baking dish. Mix the forest berries with powdered sugar and spread them over the cake batter. Finally, sprinkle the crumble mixture on top.

Bake in a preheated oven at 180°C (350°F) for 35-40 minutes until golden brown and a toothpick inserted into the center comes out clean. Make sure to do the toothpick test before taking it out of the oven. Enjoy! 😋
