INGREDIENTS (for an 18 cm cake): πŸ‘‰πŸ»FOR THE CRUST:

  • 75g almond flour
  • 75g gluten-free oat flour
  • 40g agave syrup
  • 30g butter
  • Pinch of salt
  • 2 tsp vanilla extract

πŸ‘‰πŸ»FOR THE FILLING:

  • 300ml (plant-based) heavy cream
  • 250g (plant-based) quark or Greek yogurt
  • 60ml agave syrup
  • 200ml passionfruit liqueur
  • Zest of 1/2 lime
  • 2 tsp vanilla extract
  • 8 sheets of gelatin or 7g agar agar

πŸ‘‰πŸ»FOR THE TOPPING:

  • 125g passionfruit curd or the pulp of 2 passionfruits

HERE’S WHAT TO DO: 1️⃣ Preheat the oven to 170Β°C (340Β°F). Mix all the crust ingredients into a dough and press it onto the bottom of the cake pan. Bake for 13 to 15 minutes until golden brown.

2️⃣ While the crust is baking, prepare the filling: Whip the heavy cream until it’s slightly thick, then add the quark, sweetener, vanilla, and lime zest.

3️⃣ Using gelatin? Soak the sheets separately in cold water. Squeeze them out and heat them with the liqueur in a saucepan. Proceed to step 5.

4️⃣ Using agar agar? Boil the agar agar for about 4 to 5 minutes with 100ml of water. Add the liqueur and stir.

5️⃣ Pour the slightly cooled liqueur into the cream mixture while stirring. Mix everything well with a hand mixer. You can also add a spoonful of passionfruit curd to the filling.

6️⃣ Pour the filling over the crust and refrigerate for about 3 hours. Spread the passionfruit curd or fresh passionfruit on top of the cake and ENJOY! 😍🫢🏻
