These bars are perfect for snacking on the go, keeping you satisfied for longer, and providing a good dose of protein. They’re not only gluten-free but also packed with natural sweetness from dates.

Ingredients:

  • 1 cup mixed nuts
  • 10.5 ounces (about 300 grams) soft dates
  • 1/4 cup chia seeds
  • 1/2 cup desiccated coconut
  • 1/2 cup oats
  • 1 teaspoon vanilla extract
  • 1 tablespoon date syrup
  • 2 tablespoons cocoa powder
  • 2 tablespoons tahini

Instructions:

Step 1 Start by placing the mixed nuts in a food processor and processing them until they become crumbly. Then, add the soft dates (make sure to remove any pits, and if your dates are a bit dry, you can soften them in hot water) and process again until the mixture begins to clump.

Step 2 Next, add the chia seeds, desiccated coconut, gluten-free oats, vanilla extract, date syrup, heaping teaspoons of cocoa powder, tahini, and a pinch of salt to the processor. Mix everything until the texture becomes firm and well combined.

Step 3 Transfer the mixture into a bar mold to create 8 bars or onto a small tray. Place it in the freezer for about 20 minutes to firm up. After that, you can cut it into slices. Enjoy your homemade bars!
