Ingredients

  • 9 ounces Oreo cookies (about 25 cookies)
  • 1/4 cup melted butter
  • 8.8 ounces cream cheese
  • 7 ounces plain yogurt
  • 3/4 cup heavy cream
  • 2 packets lemon-flavored gelatin, dissolved in 1 1/4 cups boiling water
  • Optional: 2-3 tablespoons powdered sugar
  • 2 packets cherry-flavored gelatin, dissolved in 3 1/3 cups boiling water
  • 9 ounces frozen or syrup-packed cherries

Instructions

  1. Crush the Oreo cookies and mix them with melted butter. Press the mixture into the bottom of a 9.5-inch diameter pan lined with parchment paper. Chill in the fridge.
  2. Dissolve the lemon-flavored gelatin in boiling water and let it cool until slightly thickened. In a bowl, combine cream cheese, yogurt, heavy cream, and optional powdered sugar. Mix briefly, then add the thickened gelatin. Mix until combined and spread over the chilled crust. Chill in the fridge.
  3. Dissolve the cherry-flavored gelatin in boiling water and let it cool until slightly thickened. Add the cherries to the thickened gelatin and pour over the set cheesecake layer. Chill the cheesecake in the fridge for a few hours before serving. Enjoy!
