Ingredients

  • Cream cheese - 14 oz
  • Sugar - 1/4 cup
  • Eggs - 2
  • Heavy cream 33% - 5 fl oz
  • For the crust:
  • Shortbread cookies - 8.8 oz
  • Unsalted butter - 3.5 oz
  • Caramel:
  • Sugar - 1/4 cup
  • Salt - 1/2 tsp
  • Unsalted butter - 0.7 oz
  • Heavy cream 33% - 2 fl oz (hot)
  • You'll also need a milk chocolate bar and 2.4 fl oz heavy cream

Instructions

Crush the cookies into crumbs, mix with melted butter, and form the base.
Spread half the crumbs onto the bottom to form the base, sprinkle the remaining crumbs along the edge of the pan and press down with a flat-bottomed glass—it's super handy.


Don't forget to line the pan with parchment paper, a 20 cm pan works well. Bake in the oven for 10 minutes at 356°F.

Filling: Combine all the ingredients in one bowl, blend with a mixer until smooth. Optionally, add a bit of lemon juice. Pour the filling into the crust. Put it in the oven for 1 hour at 266°F or until done.

Making caramel is easy:
In a skillet, pour in the sugar and wait for it to dissolve completely. Once dissolved, it'll start to brown. Once it's fully dissolved without lumps, add the butter and stir the caramel until the butter melts. Pour in the hot cream and salt, mix, and let it cook for another three minutes.
Let the caramel cool.

For the ganache, any milk chocolate will do. Melt it over a double boiler with cream or in the microwave, then mix until smooth.

Once the cheesecake is done, let it cool slightly, then pour the cooled caramel on top. Put it in the fridge until the caramel sets, then pour the chocolate ganache.

You can decorate it with Twix sticks and the remaining caramel.
