Spiced Walnut Chocolate Loaf Cake

Ingredients

  • 2 eggs
  • 2 teaspoons baking powder
  • 1 tablespoon baking soda
  • 2 3/4 cups all-purpose flour
  • 1 cup whole milk
  • 1/3 cup vegetable oil
  • 1 1/4 cups sugar
  • 3/4 cup plum jam or any other jam of your choice
  • 2 tablespoons gingerbread spice mix
  • 2 tablespoons chopped walnuts (optional)
  • 3/4 cup cherries or cherry preserves (can be substituted with other fruits like soaked raisins)
  • 2 tablespoons cocoa powder
  • 1/2 teaspoon salt

Instructions

  1. Sift together the flour, baking soda, baking powder, cocoa powder, and gingerbread spice mix. In a separate bowl, beat the egg yolks, then add the milk, plum jam, vegetable oil, and sugar. Mix the wet ingredients until well combined, then gradually add the dry ingredients, mixing until just combined. Toss the cherries in a little flour, then fold them into the batter along with the chopped walnuts, if using.
  2. In another bowl, beat the egg whites with salt until stiff peaks form. Gently fold the beaten egg whites into the gingerbread batter.
  3. Pour the batter into a loaf pan lined with parchment paper. Bake in a preheated oven at 325°F (170°C) for about 45-50 minutes or until a toothpick inserted into the center comes out clean. Enjoy your Pierniko-Murzynek!
