Strawberry Cheesecake

Cheesecake with Strawberries 😍😍

It’s super easy to make:

For the Crust:

  • 125g (1/2 cup) Butter
  • 240g (2 cups) Flour
  • 25g (2 tablespoons) Sugar
  • A pinch of Salt
  • 1 Egg

For the Filling:

  • 750g (3 cups) Quark (or use cottage cheese or ricotta)
  • 240g (1 cup) Sugar
  • 1 packet of Vanilla Sugar (or 1 teaspoon vanilla extract)
  • 40g (1/4 cup) Cornstarch
  • 5 tablespoons Oil
  • 3 Egg Yolks
  • 3 Egg Whites

For the Topping:

  • 1 packet of Red Cake Glaze
  • 400g (about 1 lb) Strawberries
  1. For the crust, knead the ingredients into a dough and spread it in a 26cm (10-inch) springform pan (make sure to grease the pan).
  2. Stir together quark, sugar, and vanilla sugar (or vanilla extract).
  3. Add cornstarch, oil, and egg yolks, and mix well.
  4. Beat the egg whites until stiff and fold them into the mixture.
  5. Spread the filling over the crust.
  6. Bake the cheesecake at 160°C (320°F) convection for about 50-60 minutes.
  7. Prepare the red cake glaze according to the package instructions. Wash the strawberries and sprinkle them on the cooled cake. Pour the cake glaze over them and let it cool.
