  • 2 1/3 cups flour
  • 1 1/4 cups sugar
  • 1 tsp lemon zest
  • 1 tsp baking powder
  • 1 good pinch of salt
  • 1 packet of vanilla sugar
  • 3 tbsp oil
  • 3 tbsp milk
  • 3 eggs
  • 1/3 cup lemon juice
  • 3/4 cup softened butter
  • 3 1/2 tbsp sparkling water
  • 3 1/2 tbsp softened butter for piping
  • Glaze:
  • 1 2/3 cups powdered sugar
  • A small splash of lemon juice


Preheat your oven to 320°F (160°C) fan (356°F or 180°C conventional).

Mix all the cake ingredients except the sparkling water until you get a creamy batter. Finally, gently fold in the sparkling water.

Pour the batter into a greased loaf pan (about 10 inches long and 4 inches wide). Use a piping bag to pipe a line of softened butter right down the middle of the batter (this helps the cake to split evenly down the center while baking).

Bake the lemon cake for about 1 hour. Use a toothpick to check if it's fully baked.

For the glaze, simply whisk together the powdered sugar and a splash of lemon juice until smooth, then spread it on the cake. Enjoy your zesty treat!
