  • 1/2 cup (110.5 grams) unsalted butter, at room temperature
  • 1/3 cup (78.5 grams) dark brown sugar
  • 2 tablespoons (28 grams) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 egg (approximately 52 grams)
  • 1/4 cup (48 grams) instant vanilla pudding mix (about 1/2 of a small box)
  • 1 1/4 cups (151 grams) all-purpose flour
  • 1/2 teaspoon baking soda (about 3 grams)
  • 1/4 teaspoon salt
  • 1 cup (200 grams) dark chocolate chips
  • 1 cup (200 grams) maraschino cherries, drained, roughly chopped, and patted dry to remove excess moisture


  1. In a large mixing bowl, cream together the softened butter, granulated sugar, and dark brown sugar until light and fluffy.
  2. Add the egg and mix until well combined. Beat in the vanilla extract, almond extract, and instant vanilla pudding mix.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Stir in the dark chocolate chips and chopped maraschino cherries until evenly distributed throughout the dough.
  6. Using a medium cookie scoop, scoop out heaping balls of dough to form cookies. You should get around 9 cookies.
  7. Place the cookies on a baking sheet lined with parchment paper and bake in a preheated oven at 350°F (175°C) for about 12-14 minutes, or until the edges are golden brown but the centers are still soft. Be careful not to over bake.
