Cherry Marzipan Pastries

I’m a fan of little pastries for coffee time 😊, and these puff pastry pockets filled with cherries are so delicious and juicy!

Making them is a piece of cake:

Ingredients:

  • 3 sheets of puff pastry
  • 1 can of sour cherries
  • 1 package of vanilla pudding powder
  • 1.1 oz (30g) sugar
  • 7 oz (200g) marzipan
  • 1 egg yolk
  • 2 tablespoons of milk
  • 1.1 oz (30g) almond flakes
  • A bit of powdered sugar
  1. Drain the cherries while collecting the cherry juice in a saucepan.
  2. In the saucepan, combine the cherry juice (about 10.1 fl oz or 300ml), pudding powder, and sugar. Bring it to a boil while stirring, then add the cherries.
  3. Dice the marzipan into small pieces.
  4. Cut each sheet of puff pastry into about 10 equal-sized rectangles (for a total of 30).
  5. Make about 5 small cuts in the middle of half of the rectangles.
  6. On the other half of the rectangles, spread out the cherries and marzipan (leave a bit of space at the edges to prevent spilling).
  7. Gently stretch the half with the cuts and place it over the cherry and marzipan filling.
  8. Use a fork to press the edges of the pastries together to seal them.
  9. Mix the egg yolk with some milk and brush it over the pastries. Sprinkle with almond flakes.
  10. Bake the cherry marzipan pastries at 356°F (180°C) for about 15-20 minutes.
  11. Sprinkle with powdered sugar and enjoy!
