- 2 cups of graham cracker crumbs
- 6 tablespoons of melted butter
- 1 cup of sugar (divided)
- 4 packages of cream cheese (8 ounces each), softened
- 3 ounces of JELL-O Peach Flavor Gelatin (equivalent to one small box)
- 8 ounces of frozen whipped topping (1 tub), thawed
- 2 fresh peaches, chopped into small pieces (you can leave the skins on or peel them – it’s your choice)
- In a large mixing bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup of sugar. Press this mixture into the bottom of a 13×9-inch baking pan. Place it in the fridge to let it firm up while you prepare the cheesecake mixture.
- In another mixing bowl, beat the softened cream cheese and the remaining 3/4 cup of sugar until it’s completely blended. Add the dry Jell-o mix and mix it in thoroughly. Gently fold in the Cool Whip and the chopped peaches.
- Retrieve the pan from the fridge and pour the cream cheese mixture over the crust. Spread it evenly using a spatula.
- Place the pan back in the fridge and let it refrigerate for about 4 hours, or until it becomes firm.
