I’ve got an epic cheesecake recipe for you, and guess what? It’s packed with Vitamin C! 😍 With a chocolatey crust on top and bottom, a creamy cheesecake filling in between, and sweet mandarins to finish it off.

Ingredients

  • For the crust:
  • 2 cups of flour (250g)
  • 2 heaping tablespoons of cocoa powder (60g)
  • 1/2 packet of baking powder
  • 1 cup of granulated sugar (150g)
  • A pinch of salt
  • 150g of butter (at room temperature)
  • 2 eggs
  • For the cheesecake:
  • 500g cream cheese
  • 1 cup of granulated sugar (150g)
  • 3 eggs
  • 1 packet of vanilla sugar
  • 1/2 cup of heavy cream (100ml)
  • A little less than 1/2 cup of sunflower oil
  • 2.5 tablespoons of cornstarch
  • 1 can of mandarins (you can use any fruit you like)

Instructions

    For the crust: Mix flour, cocoa powder, baking powder, sugar, and salt in a mixing bowl. Then add eggs and butter in pieces, and knead until smooth. Wrap in plastic wrap and let it chill in the fridge for 30 minutes.
    For the cheesecake: In a bowl, mix cream cheese, sugar, vanilla sugar, cream, and oil until creamy. Then add eggs one by one, mixing well after each addition. Finally, add cornstarch and mix until smooth.
    Take a piece of dough about the size of an apple. Roll out the remaining dough with a rolling pin and place it in a greased pan, smoothing the edges with your hands.
    Pour the cheesecake mixture on top. Drain the mandarins well and sprinkle them over the cheesecake mixture. Roll out the reserved dough slightly with a rolling pin and cut it into pieces. Place these pieces on top of the cheesecake, leaving small gaps.
    Bake the cheesecake in a preheated oven at 175°C (350°F) for about 50 minutes.
    📌I recommend baking it on the lower rack to prevent the top from burning. After baking, leave the oven door slightly open to let the cheesecake cool down.
