Ingredients

  • 4 cups of flour (550 type wheat flour)
  • 1 packet (4g) dry yeast or 1/2 ounce (8g) fresh yeast
  • 1 heaping teaspoon of salt
  • 1 teaspoon of sugar
  • a little less than 1 1/2 cups of water (350ml)
  • A little vegetable oil for greasing the bowl

Instructions

    Mix all the ingredients in a mixing bowl and gradually add the water while stirring. Once the flour is completely mixed into the dough, transfer it into a greased bowl. Cover and let it sit for 30 minutes. Then, fold the edges of the dough inward, as shown in the video. Close the lid of the bowl and let the dough rest in the refrigerator for 10-14 hours. Sprinkle plenty of flour on the counter and flip the bowl to release the dough. Lightly flour your hands and shape the dough into a rectangle without pressing too hard. Divide the dough into 4 equal parts lengthwise, then divide each part into 2 equal pieces. Fold each piece like a pouch from the ends to the center, as shown in the video. Place the dough balls on a baking sheet and cover for 30 minutes to let them rise. Preheat the oven to 250°C (480°F) and bake for about 20 minutes. As soon as you put the bread in the oven, place a heatproof container inside the oven and pour 1 cup of cold water into it. Close the oven door.
