Chocolate Mud Cake


  • 1/2 cup (120g) applesauce
  • 1 cup (240g) coconut yogurt
  • 1/3 cup (75g) Biscoff
  • 1/2 cup (110g) coconut sugar
  • 1/4 cup (60g) maple syrup
  • 1 1/4 cups (150g) GF plain flour
  • 1/2 cup (45g) cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 2/3 cup (150g) coconut yogurt
  • 3 tbsp (40g) maple syrup
  • 1/3 cup (60g) dark chocolate


  1. Preheat the oven to 170°C and grease and line a rectangular cake tin with baking paper.
  2. In a large bowl, whisk together applesauce, yogurt, Biscoff, sugar, and maple syrup until smooth.
  3. Add flour, cocoa powder, baking powder, and bicarbonate of soda, mixing until there are no lumps.
  4. Pour the batter into the prepared tin, spreading it out evenly.
  5. Bake for 25 minutes, then set aside to cool.
  6. For the frosting, melt the chocolate in a microwave-safe bowl in 30-second increments (stirring in between) until almost melted.
  7. Add yogurt and syrup, then heat again for a final 20-30 seconds.
  8. Whisk everything together until smooth, place in the fridge to cool for 30 minutes.
  9. Spread the frosting evenly over the cake, sprinkle with decorations if desired, then slice and savor the chocolatey delight! 🍫💕
