Ingredients

  • For the Base:
  • 7 oz pitted dates
  • 3.5 oz oats
  • 2.8 oz macadamia nuts (or almonds)
  • 1.4 oz cocoa powder
  • ½ tsp vanilla extract
  • A pinch of salt
  • For the Filling:
  • 5.6 oz dark chocolate, chopped
  • 10.5 oz silken tofu
  • 1.7 oz thick coconut yogurt or dairy-free cream
  • ½ tsp vanilla extract
  • A pinch of salt
  • 6 large strawberries, sliced
  • To Decorate:
  • Finely chopped dark chocolate
  • Extra strawberries

Instructions

  1. Line an 8-inch square dish with parchment paper.
  2. Soak the dates for the base for 10 minutes, then drain.
  3. In a blender or food processor, blitz oats and macadamia nuts until they form a fine crumb. Add dates, cocoa powder, vanilla, and salt, blending until it becomes a sticky mix.
  4. Press the mixture into the dish, creating an even base layer. Chill in the fridge while you make the filling.
  5. For the filling: melt the chocolate and let it cool for 5 minutes. Blend tofu, melted chocolate, coconut yogurt (or cream), vanilla, and salt until it's creamy and smooth.
  6. Take the base from the fridge. Layer sliced strawberries on it and pour the chocolate mousse filling over the top. Spread it evenly and tap down a few times to remove air bubbles.
  7. Loosely cover and chill in the fridge for 4-6 hours or overnight.
  8. For cleaner slices, freeze for 30 minutes before cutting. Use a sharp, hot knife to slice into 16 pieces. Add extra chocolate and strawberries on top.
  9. Keep in a sealed container in the fridge for up to 1 week or in the freezer for up to 1 month. These bars are perfect for a delightful, creamy treat whenever you need a sweet fix!
