Christmas Cookie Bars are like the best blondies, all dolled up with holiday M&Ms and sprinkles. They’re the perfect treat for the holiday season because they’re simple to whip up, and you can even stash some in the freezer. Whip up a batch to share with your loved ones or keep them on hand for some festive snacking all through the holidays.

Ingredients

  • Ingredients:
  • 1/2 cup (1 stick) unsalted butter
  • 2 cups (packed) brown sugar (about 400g)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 2 cups all-purpose flour (about 248g)
  • 1 cup Christmas M&Ms (or any color you like)
  • 1/2 cup Christmas sprinkles (jimmies work best)

Instructions

  1. Preheat your oven to 350°F. Line a 9x13-inch pan with foil and give it a good spray with cooking spray.
  2. Using a stand mixer or a hand mixer, blend the butter and brown sugar until it's all crumbly. Mix in the eggs and vanilla until the batter is nice and smooth. Stir in the salt, baking powder, and then the flour. Add the M&Ms and sprinkles to the mix.
  3. Spread this dough in the prepared pan. The dough is pretty wet, so it's a good idea to spray your hands with cooking spray before using them to smooth the dough out into an even layer. Sprinkle the remaining M&Ms and sprinkles on top.
  4. Bake these beauties for about 22-25 minutes, or until they just start to turn a lovely shade of golden. Go a little easy on the baking time; it's better for them to be slightly underbaked. They'll finish baking as they cool, and you definitely don't want them overdone. Once they're cooled, slice them into bars.
  5. Store them in an airtight container, and they'll stay fresh for up to 4 days. You can also freeze them for up to a month. Enjoy!
