Ingredients

  • Crust:
  • 1 2/3 cups graham cracker crumbs, crushed
  • 6 tbsp unsalted butter, melted
  • Cream Cheese Filling:
  • 4 packages (8 oz. each) cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 4 large eggs
  • 2 tbsp flour
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 2 tsp pure vanilla extract
  • Brown Sugar Filling:
  • 1 cup brown sugar
  • 1 1/2 tbsp cinnamon
  • 1/2 cup flour
  • 5 tbsp unsalted butter, melted
  • Icing:
  • 2 1/2 sticks of butter
  • 3 cups powdered sugar
  • 2 tsp vanilla
  • 3-4 tbsp heavy cream
  • Cinnamon Drizzle:
  • 1/4 cup brown sugar
  • 1 tbsp cinnamon
  • 4 tbsp unsalted butter, melted
  • Extra cinnamon for dusting the cake

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Grease a 9” springform pan and wrap the bottom with foil before baking.
  3. Create the crust by mixing graham cracker crumbs and melted butter. Press the mixture evenly into the springform pan.
  4. For the cream cheese filling, beat the cream cheese for 2-3 minutes, add sugars, beat until fluffy. Add eggs one at a time, beating only until combined. Incorporate flour, cinnamon, nutmeg, salt, and vanilla extract. Set aside.
  5. Make the brown sugar filling by combining brown sugar, flour, cinnamon, and melted butter until you get coarse crumbs.
  6. Pour about a third of the cream cheese filling into the pan, layer the brown sugar filling on top, and repeat until the cream cheese layer is the final one. Bake for about 80 minutes on a baking sheet until the top is only slightly jiggly. Turn off the oven and leave the door cracked for 45 minutes with the cake inside. Remove and refrigerate for 6 hours.
  7. Make the icing by combining butter, powdered sugar, vanilla extract, and heavy cream.
  8. Create the Cinnamon Drizzle by combining melted butter, brown sugar, and cinnamon.
  9. Pipe frosting onto the cheesecake and drizzle with the cinnamon mixture. Sprinkle a little extra cinnamon on top for the perfect finishing touch! Enjoy the goodness.
