Delicious Apple Crumble Cake

Get ready for a slice of pure delight with this apple crumble cake! It’s the kind of treat that’s so scrumptious, you won’t believe how simple it is to whip up.

For the Caramelized Apples:

  • 3 medium apples, grated
  • 1 tablespoon of lemon juice
  • 1 teaspoon of vanilla extract
  • 1 tablespoon (15g) of butter
  • 2 tablespoons (30ml) of milk
  • 1 tablespoon (20g) of honey or brown sugar

For the Crumble:

  • 3 tablespoons (37g) of brown sugar
  • 3 tablespoons (45g) of butter
  • 1 teaspoon of vanilla extract
  • 3 tablespoons (20g) of ground almonds
  • 1/2 cup (65g) of all-purpose flour
  • 1/2 teaspoon of cinnamon

For the Cake:

  • 3 eggs
  • 1/2 cup + 2 tablespoons (125g) of sugar
  • 3/4 cup + 1 tablespoon (200ml) of oil
  • 3/4 cup + 1 tablespoon (200ml) of milk
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of salt
  • 2 cups (250g) of all-purpose flour
  • 2 teaspoons of baking powder

  1. Kick things off by preheating your oven to 350°F (175°C). Grab a 9-inch (23cm) round baking pan, line it with parchment paper, and give it a good grease.
  2. Let’s tackle those caramelized apples: peel and grate your apples, give them a good stir with lemon juice, and set them aside.
  3. Now, in a saucepan, combine the butter, honey (or brown sugar), and milk. Melt it all together while stirring frequently over medium heat. Then, add those grated apples and cook them, stirring regularly, for about 4-5 minutes. Once that’s done, remove it from the heat and let it cool.
  4. For the crumble topping, mix together the brown sugar, butter, vanilla extract, ground almonds, flour, and cinnamon in a small bowl. Use your fingertips or a fork to create that crumbly texture. Pop it in the fridge while we move on.
  5. Let’s get to the cake: In a large bowl or the bowl of your trusty stand mixer, whisk up the eggs, sugar, and vanilla extract until they’ve doubled in volume. Gradually, add the oil and milk while continuing to whisk. Now, add the flour, baking powder, and salt and give it a good stir until everything’s nicely combined.
  6. Time to bring it all together! Pour your cake batter into the prepared pan, spread those caramelized apples over the top, and then sprinkle the chilled crumble evenly.
  7. Pop your creation into the oven and let it bake for 35-40 minutes. After that, give it about 10 minutes to cool in the pan. Once it’s settled a bit, release it from the pan and let it cool down completely. And there you have it, a wonderful apple crumble cake ready to enjoy!
