Frosted Gooey Lemon Bars

If you’re a fan of lemon, you’re in for a treat with this fantastic frosted gooey lemon bars recipe. It’s a simple dessert that’ll conquer your cravings for something sweet and tangy.

Ingredients:

Cake Layer:

  • 1 box (15.25 ounces) lemon cake mix
  • 1/2 cup of butter
  • 1 egg, slightly beaten

Middle Layer/Frosting:

  • 3 cups of powdered sugar
  • 4 tablespoons of butter, softened
  • Lemon juice (use it to reach your desired frosting consistency)
  • 3-5 drops of yellow food coloring
  • 8 ounces of cream cheese, softened
  • 2 eggs

Instructions:

  1. Start by preheating your oven to 350 degrees F.
  2. In a mixing bowl, combine all the ingredients for the cake layer. Press this mixture into a 9×13-inch baking pan that’s been sprayed with nonstick cooking spray. Set it aside.
  3. In a large bowl, mix the powdered sugar and butter. Add lemon juice until it reaches the desired thickness for your frosting.
  4. Beat in the cream cheese and add yellow food coloring until the frosting is nice and smooth.
  5. Don’t forget to set aside 1 cup of the frosting mixture to spread on top after baking (this step is essential!).
  6. Add the eggs to the remaining frosting mixture and beat until it’s fluffy.
  7. Spread this creamy mixture on top of the cake mix in the pan and bake for 25-30 minutes or until it’s just barely golden brown.
  8. Allow it to cool completely, and then spread the reserved frosting mixture on top before serving. These lemon bars are ready to delight your taste buds! 😍🍋🍰
