German Apple Donuts with Cinnamon Sugar

Not only are these incredibly fluffy and delightful, but the delectable apple chunks and cinnamon sugar combine to make them completely irresistible!

Ingredients:

  • 220 milliliters milk
  • 60 grams butter
  • 500 grams flour
  • 5 grams salt
  • 80 grams sugar
  • 30 grams fresh yeast
  • 2 eggs
  • 1 tablespoon grated lemon zest
  • ½ cup of cinnamon sugar
  • 3 apples

Instructions:

Step 1: Begin by taking a pan and adding milk and butter to it. Melt these on medium heat and then take it off the heat.

Step 2: In a stand mixer, combine 450 grams of flour, salt, sugar, crumbled yeast, 1 egg, lemon zest, and the slightly cooled liquid mixture of milk and butter. The milk should be warm but not too hot. Mix on low speed until the dough just comes together, then add the remaining flour and mix on high for 10 minutes or until the dough becomes smooth. Cover it with a damp tea towel and let it rest in a warm area for 90 minutes.

Step 3: After the dough has risen, punch it down and roll it out into a large rectangle, approximately 1/2 inch thick. Beat the remaining egg and brush it all over the dough. Peel, finely chop 3 apples, and spread them over the dough, leaving about two inches at one end, which you will use to roll and seal the edge.

Step 4: Sprinkle half of the cinnamon sugar over the apples, then roll the dough up to the very end and divide it into 12 pieces. Gently flatten them down, then cover with a tea towel for an additional 30 minutes.

Step 5: When the doughnuts are ready, fry them in oil over medium-high heat until they turn golden and fluffy, about 6 minutes on one side and 3 minutes on the other. Alternatively, you can brush them with more egg wash and bake them at 400°F (200°C) for about 22 minutes. Once they’re done, roll them in the remaining cinnamon sugar and savor the goodness!
