Ingredients

  • 400g softened butter
  • 400g sugar
  • 6 eggs
  • 250ml milk
  • 50g gingerbread spice mix
  • 50g cocoa powder
  • 25g baking powder
  • 25g baking soda
  • 1200g all-purpose flour
  • Pinch of salt
  • 360g butter (for glaze)
  • 210g sugar (for glaze)
  • 100g sour cream (for glaze)
  • 90g cocoa powder (for glaze)
  • 30g gelatin (for glaze), soaked in a little water
  • Plum jam or any jam for filling

Instructions

  1. Preheat the oven to 170°C (340°F).
  2. In a bowl, cream together softened butter and sugar until pale.
  3. Add eggs one at a time, mixing briefly after each addition.
  4. Dissolve baking powder and baking soda in milk, then add to the batter and mix.
  5. Mix in the gingerbread spice mix, cocoa powder, flour, and a pinch of salt until well combined.
  6. Spread the batter evenly on a baking sheet lined with parchment paper.
  7. Bake for about 45 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool, then cut it into three equal parts.
  9. Spread plum jam or any jam of your choice onto one layer, then sandwich with another layer. Repeat with the remaining layers.
  10. Wrap the assembled cake in plastic wrap and let it rest for 24 hours.
  11. After resting, cut the cake into squares, trimming off any dry edges.
  12. To make the glaze, combine butter, sugar, sour cream, and cocoa powder in a saucepan. Bring to a boil, then remove from heat and stir in the soaked gelatin.
  13. Allow the glaze to cool slightly, then pour it over the cake squares.
  14. Place the glazed squares on foil and let them set before serving. Enjoy!
