Ingredients

  • Cake:
  • 4 cups (500g) all-purpose flour
  • 1 cup (200g) butter
  • 2 eggs
  • 1 egg yolk
  • A pinch of salt
  • 2 teaspoons baking soda + 2 tablespoons milk
  • 1/4 cup (80g) Bartnik Mazowiecki acacia honey
  • 2/3 cup (130g) sugar
  • Cream:
  • 2 cups (500ml) milk
  • 1/3 cup (80g) sugar
  • 2 tablespoons vanilla sugar
  • 2/3 cup (80g) semolina
  • Filling and Topping:
  • 1/2 cup (120g) currant jam
  • 1 cup (250g) dulce de leche

Instructions

Cake:

  1. In a bowl, mix together flour, sugar, eggs, egg yolk, butter, Bartnik Mazowiecki honey, and the baking soda dissolved in milk.
  2. Knead the dough, then divide it into two parts.
  3. Line a baking pan with parchment paper and spread each dough part evenly.
  4. Bake in a preheated oven at 375°F (190°C) for about 18-20 minutes until golden brown. (If you have two pans, you can bake them simultaneously at 350°F (180°C) with convection.)

Cream:

  1. Cook semolina on milk with sugar until thickened, then transfer to a bowl, cover with plastic wrap, and let it cool completely.
  2. Beat softened butter until creamy, then gradually add cooled semolina mixture tablespoon by tablespoon. Beat until fluffy.

Assembly:

  1. Spread currant jam on one cake layer left in the pan.
  2. Spread the cream evenly over the jam.
  3. Cover with the second cake layer and press gently.
  4. Spread dulce de leche on top of the cake, decorate as desired.
  5. Chill in the fridge, preferably overnight. Enjoy your sweet treat!
