It’s that time of the year again to fill your home with the aroma of sweet spices and homemade goodness. This gingerbread is a timeless favorite, perfect for sharing with loved ones or savoring by the fireplace.

Ingredients

  • 2 cups (500 g) honey
  • 1 1/2 cups (300 g) sugar
  • 1 cup plus 2 tablespoons (250 g) butter
  • 8 1/3 cups (1 kg) all-purpose flour
  • 3 eggs
  • 1 1/2 tablespoons (45 g) baking soda
  • 1/2 cup (125 ml) milk
  • 1 teaspoon salt
  • 2/3 cup (80 g) gingerbread spice mix

Instructions

In a pot, combine sugar, honey, and butter. Bring to a boil until the butter melts, stirring occasionally, and until the sugar dissolves. Let it cool. Mix milk with baking soda. Combine flour with salt and gingerbread spice mix. Add the honey mixture, milk with soda, eggs to the dry ingredients, and knead the dough. The dough will be loose. Transfer it to an enameled, glass, or earthenware container, cover with a cloth, and let it rest in a cool place for 4-6 weeks.

After this time, divide the dough into 3 equal parts. Roll out each part to fit the dimensions of a baking sheet (about 13x16 inches). Bake each dough at 340°F (170°C) top and bottom heat for about 15-18 minutes until golden brown.
