Lemon Marshmallow Sandwiches with Lemon Curd Filling

Ingredients

  • 2 wafer bases or alternatively, 12 round cookies
  • For the marshmallow filling:
  • 1 cup sugar (about 240 grams)
  • 2 packets of vanilla sugar
  • 4 fresh egg whites
  • Also needed:
  • Lemon curd for filling
  • 21 ounces (about 600 grams) yellow chocolate coating (or chocolate of your choice)

Instructions

First, take about 1 cup of sugar and 1/4 cup of water in a saucepan, bring it to a boil while stirring occasionally. Let it simmer for 3-4 minutes until the sugar crystals dissolve.

Now, beat the egg whites with the remaining sugar and vanilla sugar until stiff peaks form. Once the egg whites are fluffy and creamy, slowly pour in the hot sugar syrup while continuing to whisk. Beat for another 4-5 minutes.

Then, immediately fill the mixture into a piping bag fitted with a star tip and pipe onto the wafer bases or cookies.

Fill lemon curd into another piping bag with a filling tip and add a portion of lemon curd into the center of each marshmallow filling. Place the marshmallow sandwiches in the refrigerator while preparing the chocolate coating.

Chop the chocolate coating into small pieces and slowly melt it in a double boiler or in the microwave at a very low setting. Pour the melted chocolate into a suitable container and drizzle it over the marshmallow sandwiches placed on a wire rack. Put a sheet of parchment paper underneath to catch excess chocolate for reuse.
