Today, I’ve got a special treat for you to try out – Lotus Cheesecake! 🤩 It’s a creamy cheesecake with Lotus biscuits in the crust and a crunchy Lotus cream topping, absolutely delicious!

  • 15 pieces of Lotus biscuits
  • 50g melted butter
  • For the cheesecake:
  • 500g Quark or Cream Cheese
  • 1/2 cup of Cream (100ml)
  • 2 eggs
  • A little more than 1/2 cup of Granulated Sugar (80g)
  • 2 tablespoons vegetable oil
  • 1 packet of Vanilla
  • 2 tablespoons Cornstarch
  • 1 heaped tablespoon Lotus Cream
  • For topping:
  • Lotus Cream


    First, let's prep our baking tin. Line the base and sides of a 26cm tin with parchment paper. Wrap the sides of an 18cm tin with parchment paper and place it inside the larger tin.
    Crush the biscuits in a food processor and pour in the melted butter. Pour the biscuits into the tin and press them down firmly.
    For the cheesecake, mix all the ingredients together and pour into the tin using a spoon. Preheat the oven to 180°C, then reduce to 140°C once the cheesecake is inside. Bake for 50 minutes. After baking, leave the oven door slightly ajar and let the cheesecake cool inside. Once cooled, remove from the tin and pour over the melted Lotus Cream.
