If you’re a fan of meringue, you’re going to love this sweet treat. Pavlova is not only delicious but also looks stunning, making it the perfect surprise for Valentine’s Day or any special event.

  • 5 egg whites
  • A pinch of salt
  • 300g powdered sugar or granulated sugar
  • 1 heaping teaspoon cornstarch
  • 1 teaspoon lemon juice
  • For the filling:
  • 250g Mascarpone or cream cheese
  • 200ml heavy cream
  • 2 tablespoons powdered sugar
  • A bit of lemon zest
  • For the strawberry sauce:
  • 5-6 strawberries
  • 1 tablespoon powdered sugar
  • For garnish:
  • Strawberries and pistachios


    Start by separating the egg whites from the yolks, ensuring no yolks mix in with the whites. Whip the egg whites with salt until they form stiff peaks. Gradually add powdered sugar while continuing to beat.
    Once thickened, add cornstarch and lemon juice, and beat for an additional 5 minutes. Pipe the mixture onto a baking sheet lined with parchment paper in heart shapes.
    Preheat the oven to 100°C with the fan setting. Reduce the temperature to 90°C when placing the tray in the oven and bake for 1 hour and 30 minutes. After baking, leave the oven door slightly ajar and let the Pavlovas cool completely.
    For the filling, mix Mascarpone, sugar, and lemon zest, then whip the cream until stiff peaks form and fold it into the Mascarpone mixture. Chill in the refrigerator.
    For the strawberry sauce, cook the strawberries with sugar, then blend until smooth.
    Tip: You can prepare the meringues a day in advance or the night before. Decorate with cream and fruits just before serving to keep the meringues crisp. Enjoy!
