  • 125g Butter (Melted)
  • 1/2 cup Brown sugar (80g)
  • 2 eggs
  • 2 tablespoons Molasses
  • 1 packet Vanilla
  • 1 packet Baking powder
  • 1 level teaspoon Baking soda
  • 2 cups Flour (230g)
  • Pinch of salt
  • 1/2 cup Milk (100ml)
  • 2 teaspoons Cinnamon
  • 1/2 teaspoon Ginger
  • 1/2 teaspoon Clove powder
  • 1/2 teaspoon Nutmeg
  • For the Cream on Top:
  • 200g Cream cheese
  • 100g Butter (room temperature)
  • 1 cup Powdered sugar

Cream together the butter and sugar. Then add the eggs and continue mixing until well combined. Next, add the spices, molasses, vanilla, salt, and milk. Mix together the flour, baking powder, and baking soda. Sift these dry ingredients into the wet mixture and stir until combined.
Divide the batter into muffin cups, filling each about two-thirds full. Bake in a preheated oven at 180°C (356°F) for 20-25 minutes. Once done, remove from the oven and let them cool.
For the Cream on Top: Mix all the ingredients using a hand mixer (if possible, let it chill in the fridge for a bit).
Put the cream into a piping bag and squeeze it onto the muffins. Wishing those who try it a delicious treat in advance!
