A tender cookie base and a chocolate layer on vanilla cream – this cake simply tastes like the Monte milk cream dessert of yesteryear! A no-bake cake that’s quick to make, will delight young and old alike, and is a delightful refreshment straight from the fridge on warm summer days! What are you waiting for?
No Bake Chocolate Vanilla Layer Cake
for the base:
- 20 butter cookies
for the vanilla cream:
- 1.5 l milk
- 150 g cornstarch
- 100 g sugar
- 2 pck. vanilla sugar
- 160 g butter
for the chocolate layer:
- 400 g dark chocolate
- 600 g cream
- Place a pastry on a baking tray lined with baking paper (size approx. 35 x 26) and spread the butter cookies in it.
- Stir 250 ml milk with cornstarch, sugar and vanilla sugar until smooth. Bring the remaining milk to the boil, slowly stir in the starch mixture. Simmer for 2 minutes, then remove from heat and stir in butter completely.
- Spread cream evenly over butter cookies, smooth and let cool in refrigerator for at least 2 hours.
- Coarsely chop the dark chocolate. In a saucepan, bring cream to a boil and then briefly stir in the chocolate pieces. Let cool slightly and then pour evenly over the milk filling.
- Refrigerate the cake for at least 2 hours, but preferably overnight.
