  • 3/4 cup (75g) oats
  • 3 tablespoons plain flour
  • 1/2 teaspoon bicarbonate soda
  • 1-2 teaspoons cinnamon
  • Frosting:
  • 7 tablespoons (100g) dairy-free butter
  • 1 teaspoon vanilla
  • 3/4 cup (75g) icing sugar

Instructions

  1. Preheat the oven to 170°C and line a tray with baking paper.
  2. In a medium bowl, whisk together the melted coconut oil, maple syrup, and coconut yogurt until smooth.
  3. Add the protein powder, oats, flour, bicarbonate soda, and cinnamon. Mix until a thick dough forms.
  4. Divide the dough into 8-12 balls, roll them, and place them on the tray.
  5. Flatten each ball slightly (they'll spread a bit), then bake for 15 minutes or until golden. Let them cool.
  6. Once the cookies are cool, make the frosting by combining butter and vanilla in a medium bowl.
  7. Use an electric whisk to beat until combined.
  8. Sift the icing sugar into the bowl and beat again until fluffy and light in color.
  9. Pipe or spread frosting onto the base of half of the cookies.
