Ingredients

  • 1/3 cup (90g) coconut yogurt
  • 2 tablespoons (20g) Biscoff
  • 2 tablespoons (25g) coconut sugar
  • 1 tablespoon (20g) maple syrup
  • 1/4 cup plus 1 tablespoon (35g) GF plain flour
  • 1 tablespoon (10g) cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon bicarbonate soda
  • 2 tablespoons (25g) Biscoff spread

Instructions

  1. Preheat the oven to 170°C and grease an oven-proof ramekin (I used one with a 12cm diameter) with butter, then dust with cocoa powder and set it aside.
  2. In a small bowl, whisk together the yogurt, Biscoff, sugar, and maple syrup until smooth.
  3. Add the flour, cocoa powder, baking powder, and bicarbonate soda, and mix until there are no lumps.
  4. Pour approximately 2/3 of the batter into the ramekin, spread it evenly, then create a well in the middle for the Biscoff.
  5. Place the Biscoff in the well and spread it out to fill the center.
  6. Add the remaining 1/3 of the batter on top of the Biscoff and smooth out the top.
  7. Bake for 15 minutes, then set it aside to cool for 10 minutes.
  8. Remove the cake from the ramekin, top it with a sprinkle of icing sugar, and enjoy the Biscoff bliss!
