- 1/3 cup (90g) coconut yogurt
- 2 tablespoons (20g) Biscoff
- 2 tablespoons (25g) coconut sugar
- 1 tablespoon (20g) maple syrup
- 1/4 cup plus 1 tablespoon (35g) GF plain flour
- 1 tablespoon (10g) cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon bicarbonate soda
- 2 tablespoons (25g) Biscoff spread
- Preheat the oven to 170°C and grease an oven-proof ramekin (I used one with a 12cm diameter) with butter, then dust with cocoa powder and set it aside.
- In a small bowl, whisk together the yogurt, Biscoff, sugar, and maple syrup until smooth.
- Add the flour, cocoa powder, baking powder, and bicarbonate soda, and mix until there are no lumps.
- Pour approximately 2/3 of the batter into the ramekin, spread it evenly, then create a well in the middle for the Biscoff.
- Place the Biscoff in the well and spread it out to fill the center.
- Add the remaining 1/3 of the batter on top of the Biscoff and smooth out the top.
- Bake for 15 minutes, then set it aside to cool for 10 minutes.
- Remove the cake from the ramekin, top it with a sprinkle of icing sugar, and enjoy the Biscoff bliss!
