Ingredients:

  • 1/2 cup of sugar
  • 2 tablespoons of cinnamon
  • 1 tablespoon of butter
  • 2 medium apples, cored and sliced into 1/4-inch thick rings
  • 1 cup of prepared pancake batter (from pancake mix)
  • Maple syrup for serving

Instructions:

  1. Mix sugar and cinnamon in a small bowl and set it aside.
  2. In batches, melt some butter in a nonstick skillet over medium-high heat until it starts sizzling. Take an apple ring, dip it into the pancake batter, making sure it’s fully coated on both sides. Gently tap off any excess batter, and then transfer the apple ring to the hot skillet. Cook without flipping until bubbles start forming around the base of the “pancake,” and it turns golden brown on the bottom, which should take about 2 minutes. Flip it and continue cooking until the other side is browned, approximately 1 more minute. Finally, transfer the cooked pancake ring to the bowl with the cinnamon-sugar and turn it to coat both sides. Move it to a plate and repeat the process with the remaining apple rings and butter.
