Pear Crumble Cake

Pear crumble cake, with a crispy crust, a layer of pear paste, a delightful filling of pear chunks, cinnamon, figs, and a crispy crumble on top. Even better with a dollop of cinnamon whipped cream! 👀 An AMAZING combination that everyone can enjoy! 😍🫶🏻

INGREDIENTS (7-8 inch cake):

  • 225g gluten-free oat flour
  • 100g almond flour
  • 90g date syrup or maple syrup
  • 80g (plant-based) butter or coconut oil
  • 1 tbsp speculaas spice (a Dutch spice blend)
  • 1 tsp baking powder
  • 50g applesauce OR 1 egg
  • Pinch of salt
  • Optional: 1 tsp xanthan gum

PEAR PASTE:

  • 125g almond flour
  • 100g pureed pear
  • Zest of 1/4 lemon

FILLING:

  • 3 to 4 pears
  • 50g figs, diced
  • 2 tsp cinnamon
  • 1 tbsp arrowroot or cornstarch
  • 2 tbsp apricot jam or maple syrup

TOPPING:

  • 1/4 of the dough + 30g sliced almonds

LET’S DO THIS! 💫 1️⃣ Mix the dough ingredients together and line the springform with 2/3 of the dough.

2️⃣ Stir the ingredients for the pear paste together and spread it over the base.

3️⃣ Cut the pear into slices and sauté them with the remaining ingredients until they’re slightly tender. Spread them over the paste.

4️⃣ Stir the crumble ingredients together and sprinkle over the cake. Press it down well and bake until golden brown, about 50-55 minutes at 160°C (320°F).

5️⃣ Let the cake cool and then refrigerate it for a few hours. ENJOY!
