Ingredients

  • For the Dough:
  • 1 1/4 cups All-purpose flour
  • 1 tablespoon sugar
  • A pinch of salt
  • 6 tablespoons cold butter, diced
  • 1 tablespoon ice water
  • 1 tablespoon yogurt
  • For the Filling:
  • 2 pears, cored and thinly sliced
  • about 3/4 cup chopped walnuts
  • 1.5 tablespoons sugar
  • 1 teaspoon cinnamon
  • A pinch of salt
  • Juice of half a lemon

Instructions

  1. Mix flour, sugar, and salt. Add cold butter and blend until crumbly. Add ice water and yogurt, knead until it forms a smooth dough. Shape into 4 balls, wrap in plastic, and chill in the fridge for at least 30 minutes.
  2. Preheat the oven to 350°F (convection).
  3. Roll out the dough thinly into circles on a floured surface.
  4. Toss pear slices with lemon juice. Get the walnuts coarsely chopped. Mix sugar and cinnamon.
  5. Spread the filling onto the center of each dough circle, leaving an edge free. Sprinkle with the sugar-cinnamon mix and walnuts.
  6. Fold the dough edges over the filling, sprinkle with walnuts, and lightly press. Put the galettes on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for about 25-30 minutes or until golden brown.
  8. Take the Pear Galettes out, let them cool a bit. Dust with powdered sugar as you like and serve.
