Ingredients

  • 32 speculoos biscuits (about 230g)
  • 60g mascarpone cheese
  • 1 tablespoon speculoos paste
  • Around 250g white chocolate for coating
  • For decoration:
  • Speculoos paste
  • Ground speculoos biscuits

Instructions

    Finely grind the speculoos biscuits using a blender. In a bowl, mix the biscuit powder, mascarpone, and speculoos paste by hand until you have a firm dough.
    Make balls about 20g each. Place the balls on a plate lined with parchment paper and let them rest in the freezer for 30 minutes.
    Meanwhile, melt the white chocolate in the microwave or using a double boiler. Be careful, white chocolate is delicate, so don't heat it for too long.
    Quick tip: To give the chocolate shine and fluidity, add a teaspoon of sunflower oil and mix.
    Dip each ball in the white chocolate, gently lift with a fork, and place on a parchment paper-lined tray to set.
    Melt about a tablespoon of speculoos paste and use a piping bag (or a zip-lock bag if you don’t have one) to decorate the truffles.
    Lastly, sprinkle with ground biscuits. Store the truffles in an airtight container in the fridge. They keep well for about 1 week.
