Easy Tiramisu Poke Cake Recipe

This classic dessert gets the poke cake treatment!.. Yellow cake is poked and topped with a coffee-flavored sweer drizzle and then a cream frosting in this decadent tiramisu poke cake. Can be made up to 2 days in advance of serving.

Ingrеdіеntѕ:

  • Cooking spray, for pan
  • 1 box yellow cake mix, plus ingredients called for on box
  • 2 boxes vanilla pudding mix
  • 3 c. milk
  • 1 tbsp. instant coffee
  • 2 c. heavy cream
  • 2 tbsp. sugar
  • 1 tsp. pure vanilla extract
  • pinch of kosher salt
  • 1/2 c. cocoa powder
  • 1/4 c. chocolate shavings

Preheat oven to 350º and grease and flour a 9″-x-13″ cake pan. Prepare yellow cake mix according to box instructions. Pour batter into prepared pan and bake until a toothpick inserted in the center comes out clean, about 25 minutes. Let cool 10 minutes.

Meanwhile, prepare pudding: In a large bowl or measuring cup, whisk instant espresso into milk. In a large bowl, whisk together pudding packets and coffee flavored milk until thick. Set aside.
In another large bowl, beat cream, sugar, vanilla and a pinch of salt until stiff peaks form. Set aside.

Using the bottom of a wooden spoon, poke holes all over the cake. Spread pudding mixture on top, making sure to fill poke holes. Top with whipped cream and a dusting of cocoa powder. Sprinkle with chocolate shavings and serve.
