Here’s a recipe for Walnut Brownie Bites that are perfect for a not-too-unhealthy sweet snack! Feel free to adjust the sweetness by adding more maple syrup if you like your brownies a bit sweeter.
- 40g oat flour
- 40g all-purpose flour
- 40g vegan chocolate protein powder (from @vetain_de)
- 1/3 tsp cinnamon
- 1/2 tsp baking powder
- 20g unsweetened cocoa powder
- Optional: chopped walnuts & chocolate chunks
- 80g soy milk (adjust if needed based on your protein powder)
- 40g plant-based oil of your choice
- Juice of 1 orange
- 50g maple syrup
- 40g dark chocolate
- 50g coconut cream
- For the brownies: Mix all the dry ingredients together. In another bowl, combine all the wet ingredients. Pour the wet mix into the dry one and stir until combined. Don't overmix. If it's too dry, add more milk until it's like the consistency shown in the video. Line a small baking pan (12x18cm) with parchment paper, spread the brownie batter evenly, and bake for 20-25 minutes. Let them cool completely.
- For the ganache: Heat the coconut cream in a small pot. Once hot (but not boiling), add the chocolate and let it melt. Spread the ganache on the brownies and let it cool. Enjoyyy!
