Ingredients

  • 500 grams of all-purpose flour
  • 1 packet of dry yeast
  • 1 egg
  • 4 tablespoons of granulated sugar (about 80 grams)
  • 80 grams of butter (at room temperature)
  • 1 packet of vanilla sugar
  • 1 cup of lukewarm milk (200 ml)
  • For the almond filling:
  • 1 cup of ground almonds (about 100 grams)
  • Slightly less than 1 cup of sugar (about 130 grams)
  • 100 grams of butter
  • For the topping:
  • 1 egg yolk
  • 1 teaspoon of milk
  • Blackberries
  • Sliced almonds

Instructions

First, combine all the ingredients except for the butter in a mixing bowl and start kneading. Once the dough starts to come together, add the butter. Knead for about 5 minutes until the dough is smooth and elastic. Then, cover it and let it rise for 1 hour.

While the dough is rising, prepare the almond filling by mixing all the ingredients together.

After the dough has risen, roll it out into a rectangle. Spread the almond filling on half of the dough and fold the other half over it. Cut the dough into strips about 3 fingers wide. Make 3-4 cuts in each strip and then twist them around themselves to form spirals.

Mix the egg yolk with milk and brush it over the pastries. Press blackberries onto the tops and sprinkle sliced almonds over them.

Bake in a preheated oven at 180°C (350°F) for about 25-30 minutes until golden brown.
