  • 1/2 cup (113g) of salted butter
  • 1/2 cup (100g) of caster sugar
  • 1/2 cup (80g) of soft brown sugar
  • 1 egg
  • 1 tablespoon of vanilla extract
  • 3/4 cup of flour
  • 1 tablespoon of cornflour
  • 1/2 teaspoon of baking soda
  • 1/2 cup of cocoa powder
  • 200g of dark chocolate chunks
  • A pinch of cracked sea salt

Now, let’s get baking:

  1. Start by creaming together the sugars and softened room-temperature butter until the mixture becomes fluffy and takes on a pale appearance.
  2. Next, add in the egg, along with the vanilla extract, and mix until everything is well combined.
  3. It’s time to incorporate the dry ingredients. Add the flour, cocoa powder, bicarbonate of soda, and cornflour into the mix. Stir it all together with a spatula until the dough comes together.
  4. Now, fold in those delicious chocolate chunks. Make sure to save a few to place on top of each cookie.
  5. Allow the cookie dough to chill in the fridge for about 30 minutes to an hour.
  6. Using an ice cream scoop, drop 6 cookie portions onto a baking tray lined with parchment paper.
  7. Press some of those reserved chocolate chunks onto the top of each cookie, and then bake them at 170°C for 12 minutes.
