- 2.5 ripe bananas (250g)
- 1 flax egg (or 1 regular egg if not vegan)
- 100g maple syrup
- 60g plant-based oil
- 1.6 cups (200g) flour (I used 1 cup normal flour and 2/3 cup oat flour)
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/3 cup (50g) chocolate chips
- Prepare a small baking pan with parchment paper, greasing the uncovered edges. Preheat the oven to 180 °C.
- In a large bowl, mash the bananas with a fork. Add the flax egg, maple syrup, and oil.
- In another smaller bowl, combine all the dry ingredients and 2/3 of the chocolate chips.
- Add the dry mixture to the banana mixture and stir to combine, but don't overdo it. If your batter is too dry, add a little plant-based milk.
- Transfer the batter to the pan, cover with the remaining chocolate chips, and bake for about 40 minutes or until a wooden stick comes out clean.
